Ingredients

  • 400 g ostrich fillet
  • 1 tomato
  • 150 g pearl onion
  • 150 g button mushrooms
  • 1 Garlic clove
  • 1 EL clarified butter
  • 1 TL tomato paste
  • 1 TL flour
  • Salt
  • Pepper
  • 1 tsp grated lemon zest
  • 1 tsp ground pimento
  • 250 ml dry red wine
  • 250 ml poultry broth
  • 1 TL chopped parsley

    Wash the meat, pat it dry and cut into about 3 cm pieces. Wash the tomatoes, halve them, remove the stem ends and dice into small cubes. Peel and halve or quarter the onions. Clean the mushrooms and also halve or quarter them. Peel the garlic and finely chop it. Heat the clarified butter in a pan, brown the meat in it. Add the onions and sauté briefly, then add the tomato paste and cook for a short while. Coat the meat with flour, season with salt, pepper, lemon zest and pimento, deglaze with red wine and broth. Add the mushrooms and let everything simmer gently for about 5 minutes. Stir in the tomatoes and adjust seasoning. Sprinkle with parsley before serving.
