Original Wiener Schnitzel

Ingredients
- 4 veal cutlets (100 g each)
- 1 pinch salt
- 1 pinch freshly ground pepper
- 0.5 tsp lemon zest
- 80 g flour
- 200 g breadcrumbs
- 2 eggs (medium size)
- 2 tbsp mineral water
- 200 ml oil
- 2 tbsp butter

Place the cutlets between two sheets of cling film and gently pound them flat with a meat mallet or the back of a saucepan to increase surface area. Season the cutlets with salt, pepper, and lemon zest.

Put flour and breadcrumbs each in separate shallow bowls. Whisk eggs with mineral water in another bowl. Dredge each cutlet first in flour, then in the egg mixture, and finally in the breadcrumbs, pressing lightly to adhere.

Heat oil in a large pan. Fry the cutlets for 2–3 minutes on each side until golden brown, gently shaking the pan so fat splashes over them.

Remove excess fat and add butter to the pan. Brush the cutlets with the melted butter and drain on paper towels. Serve with lemon wedges if desired, accompanied by roast potatoes and a green salad.
