Ingredients
- 4 medium zucchinis
- 3 tbsp Raisins
- 5 garlic cloves
- 5 shallots
- 0.5 tsp ground coriander
- 0.5 tsp ground cumin
- 0.5 tsp cayenne pepper
- Salt
- 1 tbsp chopped fresh cilantro
- 6 tbsp Olive oil

Wash zucchini, cut lengthwise into quarters or eighths and blanch in boiling salted water for 7 minutes. Drain well and lightly salt.

Finely chop raisins with a sharp knife. Peel and finely mince garlic and shallots. Heat oil in a pan. Add raisins, garlic, shallots, coriander, cumin, and cayenne pepper; sauté until translucent over medium heat.

Add salt and fresh cilantro, pour hot mixture over zucchini, and serve garnished with parsley. Pair with ready-made sesame flatbread from an Arab market (or a Turkish grocery store).
