Orange Roll Fish Fillets
Spoonsparrow offers this fresh sea fish dish with orange butter sauce.
Ingredients
- 4 sprigs thyme
- 4 cloves garlic
- Salt
- 3 tbsp Lemon juice
- 640 g cod fillet (8 fillets)
- black pepper (ground)
- 1 tsp Cayenne pepper
- a pinch nutmeg
- a pinch ground cloves
- 2 untreated oranges
- 75 g butter
- 1 tsp sugar
- 30 ml orange liqueur
- 1 tbsp orange marmalade
- butter for greasing the dish

Wash thyme, shake dry, pluck leaves from stems and finely chop. Peel garlic and grate with a little salt. Combine garlic and thyme in a bowl, add lemon juice, mix and let sit.

Preheat oven to 220 °C (convection). Pat cod fillets dry, season with pepper, cayenne, nutmeg, and cloves, then spread thyme mixture over them. Roll into cylinders, secure with wooden skewers or pastry pins, and place side by side in a greased baking dish. Squeeze one orange, pour juice over the rolls, cover with foil. Bake on middle rack for about 15 minutes.

Meanwhile, wash the second orange, grate its zest thinly, then squeeze its juice. Melt butter in a saucepan, add orange zest, sprinkle sugar, and lightly caramelize. Finish with orange liqueur, marmalade, salt, and pepper to taste. Remove rolls from oven, arrange on warmed plates, scatter orange zest over them, drizzle sauce, and serve immediately.
