Plaice on Zucchini Vegetable

Ingredients
- 4 plaice fillets (about 70 g)
- 1 tbsp Lemon Juice
- Salt
- Pepper (freshly ground)
- 1 tbsp Tomato Paste
- 1 bunch dill
- 1 Red Onion
- 1 zucchini (about 300 g)
- 1 tsp Olive oil
- 100 ml Vegetable broth
- 2 tbsp potato mash powder
- small wooden skewers

Drizzle the plaice fillets with a little lemon juice, season with salt and pepper, and spread thinly with tomato paste. Wash the dill, shake dry, roughly chop and sprinkle half of it over the fish fillets. Roll the fillets, secure with wooden skewers, and refrigerate.

Peel the onion and dice finely. Wash and scrub the zucchini, then grate coarsely. Warm the oil in a pot lightly. Sauté the onion cubes over low heat until translucent. Add the grated zucchini and sauté briefly, deglazing with broth.

Season the vegetables with lemon juice, salt, pepper, and the remaining dill. Place the plaice rolls on top of the vegetables, cover, and cook over medium heat for 6 minutes.

Remove the plaice rolls from the pot and place them on a plate. Stir the potato mash powder into the zucchini sauce, bring to a quick boil, then pour over the plaice rolls. Serve immediately.
