Ingredients

  • 1 small red onion
  • 125 g small oranges (1 small orange)
  • 1 tbsp soy sauce
  • 0.5 tsp honey
  • Salt
  • Pepper
  • 0.5 tsp olive oil
  • 20 g arugula (0.25 bunch)

Instructions

    Peel the onion, halve it and slice into very thin strips.

    Peel the orange so that the white pith is removed. Cut out the segments between the membranes, catching the juice in a bowl as you go.

    Mix soy sauce and honey into the collected orange juice. Season with salt and pepper, then whisk in the olive oil.

    Gently combine the orange segments and onion strips with the dressing.

    Wash, trim, dry, chop the arugula and sprinkle it over the orange‑onion salad.
