Orange Crêpes

Ingredients
- 80 g flour
- 2 Eggs
- 1 Tbsp vanilla sugar
- a pinch of salt
- 1 egg yolk
- 100 ml milk
- 100 ml sparkling water
- 2 tbsp liquid butter
- butter (for frying)
- 350 g strawberries
- 1 packet vanilla sugar
- 2 ripe mangoes
- 1 untreated orange

Combine flour, salt and vanilla sugar in a bowl; whisk in eggs and yolk with a whisk. Add milk and sparkling water, stir in liquid butter, and let the batter rest for 1 hour.

Wash, pat dry, and halve the strawberries. Sprinkle half of the vanilla sugar over them and let marinate briefly. Peel mangoes, remove flesh from pits, blend in a mixer, strain through a sieve, and mix with remaining vanilla sugar.

Heat some butter in a heavy pan; cook thin crêpes one after another, keeping them warm.

Using a sharp knife, peel long strips from the orange. Fill crêpes with marinated strawberries and bind with orange strips. Spread mango puree on plates, place crêpe parcels atop, and garnish with remaining strawberries.
