Ingredients

  • 2 untreated oranges
  • 120 g sugar
  • 250 g butter cookies
  • 120 g butter
  • 2 tbsp brown sugar (30 g)
  • 800 g cream cheese
  • 250 g sour cream
  • 30 g cornstarch
  • 120 g sugar
  • 4 eggs
  • 1 pinch salt
  • vanilla essence
  • 1 tsp organic lemon zest

Instructions

    Wash the two oranges hot and slice them very thinly. Boil the sugar with 250 ml water in a pot until dissolved. Add the orange slices to the boiling liquid, let it boil briefly, then remove from heat and allow to steep for 1–2 hours.

    For the base, crumble the cookies in a food processor not too finely. Melt the butter and mix with the sugar into the crumbs. Press the cookie mixture onto the bottom of a springform pan. Refrigerate to chill.

    Whisk together cream cheese, sour cream, cornstarch, sugar, eggs, salt, vanilla essence, and lemon zest until smooth. Spread the mixture over the cookie base evenly. Cover the pan with foil and poke several holes in it. Bake in a preheated oven at 180 °C (fan 160 °C; gas: level 2–3) for 50–60 minutes.

    Let cool, release from the pan, and top with drained orange slices. Serve sliced into pieces.
