Ingredients

  • 600 g vegetable onions
  • 300 g potatoes
  • 300 g carrots
  • 3 tbsp oil
  • 1 l vegetable broth
  • 1 bay leaf
  • 2 tsp cumin
  • 4 small sausages (e.g., Nürnberger Rostbratwürstchen)
  • 1 tbsp chopped flat-leaf parsley
  • Salt
  • ground pepper
  • 50 g fresh horseradish root

Instructions

    Peel onions, halve and slice thinly. Peel potatoes and carrots; dice potatoes, slice carrots. Sauté everything in 2 tbsp hot oil, then add broth. Add bay leaf and cumin, cook over medium heat for 15-20 minutes.

    Brown the sausages in remaining oil for 5-7 minutes until golden brown. Grate horseradish finely. Season stew with salt and pepper, stir in parsley. Cut sausages into bite-sized pieces and add to stew. Serve with grated horseradish on the side.
