Ingredients
- 600 g brown lentils
- 250 g beef (e.g., stew meat)
- 2 onions
- 4 Carrots
- 200 g celery root
- 1 small parsley root
- 1 stalk leek
- 1 l water
- 1 bay leaf
- 1 sprig thyme
- 1 can kidney beans
- 0.5 bunch Parsley
- Salt
- Pepper
- 2 tbsp Red wine vinegar
- sharp mustard
- 2 tbsp oil
Instructions

Rinse the lentils in cold water and drain. Cut the beef into cubes. Wash and clean the vegetables. Slice the carrots, dice the celery root, and finely cube the parsley root. Chop the onions. Brown the beef cubes in hot oil, add the onions and sauté until translucent. Add the vegetables with the lentils and cook briefly. Pour in water and bring to a boil. Rinse the herbs, shake dry, and chop. Simmer gently over low heat for about 1 hour.

Before serving season well with salt, pepper, red wine vinegar, and mustard.
