Onion-Bacon Quiche

Ingredients
- 21 g yeast (0.5 cube)
- 150 ml lukewarm milk
- 1 pinch sugar
- 0.5 tsp Salt
- 300 g flour
- 1 kg onions
- 175 g breakfast bacon
- 400 g sour cream
- 3 eggs
- 0.5 tsp Salt
- pepper (ground)
- fat (for the baking tray)
Instructions

Whisk the yeast into the lukewarm milk with the sugar until smooth.

Add the flour and salt and knead thoroughly with the dough hooks of an electric mixer into a smooth dough.

Cover the dough and let it rise in a warm place for about 45 minutes.

For the filling, peel the onions and slice them thinly into rings.

Dice the bacon and fry it in a large pot until translucent. Add the onions and sauté until translucent.

Whisk together sour cream, eggs, salt, and pepper.

Then mix this with the onion-bacon mixture.

Knead the dough again on a floured surface. Roll it out directly onto the greased tray and form a small edge.

Spread the onion-bacon filling over the dough. Bake the quiche on the middle rack in a preheated oven at 200°C for about 35 minutes.
