Onion Bacon Cake

Ingredients
- 350 g flour
- 1 cube yeast (42 g)
- 200 ml lukewarm milk
- 1 tsp salt
- flour for dusting
- 1.5 kg onions
- 2 tbsp butter
- 200 g Sour Cream
- 200 g crème fraîche
- 4 eggs
- Salt
- Pepper
- 0.5 tsp caraway seeds
- 60 g bacon cubes

In a bowl, combine the flour. Dissolve the yeast in the milk and pour it over the flour with the salt. Knead with dough hooks until smooth, adding more flour or lukewarm milk if needed. Cover and let rest for about 1 hour in a warm place.

Meanwhile, peel the onions and slice finely (use a food processor if desired). Sauté in hot butter in a large pan for about 5 minutes until soft. Remove from heat and cool.

Preheat the oven to 200 °C with upper and lower heating. Line a baking sheet with parchment paper.

Roll out the dough on a floured surface to fit the sheet, place it on the sheet, press down and form a rim. Distribute the onions over the dough. Mix the sour cream with crème fraîche, eggs, salt, pepper, caraway, and bacon cubes. Pour this mixture over the onions and bake the onion cake for about 1 hour until golden brown.
