Omelette with Leek and Bacon

Ingredients
- 150 g flour
- 2 Eggs
- 250 ml milk
- 2 tsp oil
- oil (for frying)
- 75 g Gouda cheese (finely grated)
- 500 g leek (white and light green parts, washed and cleaned)
- 75 g breakfast bacon (finely diced)
- Salt
- Pepper (freshly ground)
- 4 tbsp crème fraîche
Instructions

Whisk flour with egg, milk, oil and salt; let the batter rest for about 30 minutes. Then fold in 25 g of Gouda.

Slice leek into thin rings. Fry bacon in a pan until crisp, then add leeks and cover to steam for about 8-12 minutes. Season with salt, pepper and crème fraîche.
