Ingredients

  • 100 g cold butter
  • 200 g Flour
  • 1 pinch salt
  • 1 egg
  • 1 tbsp basil (finely chopped)
  • 250 g black olives (pitted)
  • 100 g whipping cream
  • 100 g crème fraîche
  • 2 Eggs
  • Salt
  • pepper (from the mill)
  • nutmeg
  • 1 tsp Mustard
  • 1 tsp grated lemon zest
  • 60 g mozzarella (grated)
  • 2 tbsp basil (finely chopped)
  • 4 ramekins (12 cm diameter)
  • 1 bunch rocket (for garnish)

Instructions

    Quickly knead all dough ingredients together, shape into a ball and wrap in cling film; refrigerate for at least 1 hour.

    Chop the olives. Whisk cream with crème fraîche, mozzarella, and eggs; season with salt, pepper, nutmeg, mustard, and lemon zest, then fold in basil and olives.

    Roll out the dough to about 3-4 mm thickness, cut four circles slightly larger than the ramekins, line the ramekins with them. Spread the egg‑cream mixture over the dough and bake in a preheated oven at 200°C (convection) on the middle rack for about 30–40 minutes.

    Release the quiches from the ramekins and serve on plates garnished with rocket.
