Ingredients

  • 600 g small okra (lady fingers)
  • 1 large onion (blue)
  • 100 g olives (green)
  • 400 g cherry tomatoes
  • 6 tbsp white balsamic vinegar
  • 1 lemon (juiced)
  • 6 tbsp Olive oil
  • Salt
  • Pepper

Instructions

    Wash the okra and blanch in boiling salted water for about 5 minutes. Drain, then shock in cold water.

    Wash the tomatoes and quarter them. Peel the onion, halve it, slice thinly, briefly blanch, then shock in ice water and drain well.

    Drain the olives. Combine all ingredients. Whisk together balsamic vinegar, olive oil, lemon juice, salt, and pepper; drizzle over the salad.

    Let the salad rest for about 30 minutes before serving with white bread.
