Ingredients
- 100 g fine rolled oats
- 100 g rolled oats
- 300 ml Vegetable broth
- 3 spring onions
- 1 Garlic clove
- 2 Eggs
- 2 tbsp butter
- 2 tbsp parsley (finely chopped)
- Salt
- Pepper
- nutmeg
- clarified butter (for frying)

Mix the oats, pour boiling broth over them and cover for 30 minutes to absorb. Drain and let rest. Wash and trim spring onions; finely chop the white parts, slice the green into thin rings, sauté in hot butter, add pressed garlic, then mix with the oat mixture, eggs, herbs, salt, pepper and nutmeg.

Shape the batter into 4 patties (add a little flour if needed) and fry each side in hot clarified butter for about 5 minutes until golden brown.
