Oat and Vegetable Patties with Beans
The oat-vegetable patties with beans from Spoonsparrow taste guaranteed not only for vegetarians!
Ingredients
- 150 g hearty oats
- 1 Carrot
- 125 g Zucchini (0.5 Zucchini)
- 2 onions
- 4 tbsp olive oil
- 500 g flat beans
- 10 g parsley (0.5 bunch)
- 0.5 tsp turmeric powder
- 250 ml vegetable broth
- 1 egg
- 45 g spelt whole‑grain flour (3 tbsp)
- Salt
- Pepper

Soak oats in 250 ml hot water for about 30 minutes. Meanwhile peel the carrot and wash the zucchini; grate both. Peel and finely chop the onions. Heat 1 tbsp olive oil in a pan, sauté the onions for 2 minutes over medium heat.

Meanwhile rinse and cut the beans into short pieces. Wash, dry, and chop the parsley. Heat 1 tbsp olive oil in another pan, add half of the onions and sauté for 2 minutes over medium heat. Add the beans and cook for 4 minutes, then add turmeric and vegetable broth; simmer gently for about 12 minutes. Season with salt, pepper, and parsley.

Combine oats, carrot, zucchini, remaining onions, egg, flour, salt, and pepper in a bowl and mix well. In a pan, fry portions of the mixture into 8 patties: heat a little oil per patty, add 1–2 tbsp of the dough, press flat, and cook each side for 3–4 minutes over medium heat until golden brown. Serve with the beans.
