Chili con Carne with Black Beans
Chili con Carne with black beans from Spoonsparrow: The treat is not only healthy but also a practical one-pot dish!
Ingredients
- 1 onion
- 2 Garlic cloves
- 2 tbsp olive oil
- 600 g ground beef
- 2 tbsp Tomato paste
- 1 tsp raw cane sugar
- cayenne pepper to taste
- 1 organic orange (zest)
- salt to taste
- 1 tsp Dried oregano
- black pepper to taste
- 400 g passata tomatoes
- 200 g kidney beans (drained weight; canned)
- 200 g black beans (drained weight; canned)
- 80 g corn kernels (drained weight; canned)
- a handful coriander (5 g)
Instructions

Peel and finely chop the onion and garlic. Heat oil in a pot. Add ground beef and cook over high heat for 3 minutes until browned. Add onion and garlic and continue cooking together for another 5 minutes.

Add tomato paste and fry for 2 minutes. Season with sugar, cayenne pepper, orange zest, salt, oregano, and black pepper. Stir in tomatoes, cover, and simmer for about 30 minutes, adding water if needed.

Meanwhile, rinse beans and corn in a sieve and drain. Add them to the chili and simmer on low heat for another 10 minutes. Wash coriander, pat dry, and tear leaves into pieces. Taste the chili and sprinkle with coriander before serving.
