Ingredients

  • 150 g flour
  • 100 g Ground Almonds
  • 3 tbsp cocoa powder
  • 80 g sugar
  • 125 g cold butter
  • 1 egg
  • 100 g dark couverture chocolate
  • Chopped pistachios

Instructions

    Gather flour, almonds, cocoa and sugar on a work surface. Add finely chopped butter around it, place the egg in the center, mix everything together, then quickly knead into dough.

    Form small cherry-sized balls, place them on a plate, cover and refrigerate for 1 hour.

    Transfer the dough balls onto a baking sheet lined with parchment paper and bake at 180°C for about 10-12 minutes. Remove and let cool.

    Melt the couverture chocolate in a double boiler. Dip one side of each cookie halfway into the melted chocolate, sprinkle with some pistachios, and set on a wire rack to harden.
