Nut-Chocolate Cookies

Ingredients

  • 130 g soft butter
  • 250 g sugar
  • 2 tsp vanilla sugar
  • 0.5 tsp cinnamon
  • 0.5 tsp Salt
  • 3 tbsp honey
  • 3 eggs
  • 350 g flour
  • 70 g ground hazelnuts
  • 1.5 tsp Baking Powder
  • 200 g dark chocolate
  • 150 g nut nougat
  • 50 g dark chocolate couverture
  • powdered sugar (for dusting)

Instructions

    Preheat the oven to 170°C. Line one or two baking sheets with parchment paper and cut the chocolate into pieces.

    Cream the butter in a large mixing bowl. Gradually add sugar, vanilla sugar, cinnamon, salt, honey, and eggs, stirring well. Mix flour with nuts and baking powder; fold this dry mixture into the batter until a soft dough forms. Finally, fold in the chocolate pieces.

    Scoop portions of dough with a teaspoon or tablespoon, shape into balls, and press them slightly flat on the sheet. Place the cookies spaced apart as they will spread a bit. Bake for 10-15 minutes until golden brown, let cool briefly on the sheet, then transfer to a wire rack to cool completely.

    For the filling, melt the nougat with the couverture gently in a double boiler. Spread a layer of this cream on the bottom of one cookie, place another cookie on top, allow it to set, and dust with powdered sugar.
