Mediterranean Olive Bread

Ingredients
- 2 onions
- 400 g black olives (pitted)
- 750 g wheat flour (Type 550)
- 150 ml lukewarm water (add more if needed)
- 42 g yeast (1 cube)
- 1 tsp thyme honey
- 6 tbsp Olive oil
- 1 tsp salt

Sift the flour into a bowl. Create a well in the center. Dissolve the honey and yeast in the water and pour into the well. Sprinkle with a little flour and cover with a damp cloth for about 15 minutes to proof.

Peel and dice the onions. In a small pan heat 2 tbsp of olive oil and sauté the onion cubes until translucent.

Season the dough and add the remaining olive oil. Knead well, incorporating the onions and olives into the dough. Cover again with a damp cloth and let rise for another half hour. Preheat the oven to 220 °C. Line a baking tray with parchment paper. Shape the dough into an elongated loaf, score the surface several times, and bake the olive bread for about 35‑40 minutes until golden brown. Cool on a wire rack.
