Ingredients
- 750 ml water
- 170 ml white wine vinegar
- 1 Carrot
- 3 onions
- 1 bay leaf
- 3 crushed juniper berries
- 10 white peppercorns
- 1 tsp salt
- 12 raw Nuremberg roast sausages

Peel the carrot and slice it into rounds.

Peel the onion and cut it into rings.

Heat water with vinegar, add carrot, onions, bay leaf, peppercorns, juniper berries, and salt; simmer over low heat for about 20 minutes.

Place the sausages in the broth, cover, remove from heat immediately, and let the sausages steep for about 15 minutes.

Serve the finished sausages (they should feel firm) in a large terrine with freshly grated horseradish, mustard, and dark bread.
