Ingredients

  • 1 yellow bell pepper
  • 1 red bell pepper
  • 1 Zucchini
  • 1 eggplant
  • 200 g cherry tomatoes (yellow and red)
  • 1 Garlic clove
  • 3 tbsp olive oil
  • 1 Red Onion
  • 12 Nürnberger grilled sausages
  • 2 tbsp garden cress
  • 2 tbsp basil
  • Salt
  • Pepper (freshly ground)
  • Lemon juice

Instructions

    Preheat the grill.

    Wash the bell peppers, quarter them, remove seeds and white walls, then cut into bite-sized pieces. Wash, trim, quarter lengthwise, and slice zucchini and eggplant into 1 cm thick pieces.

    Wash and quarter the tomatoes. Peel and finely chop the garlic, mix with the vegetables (except tomatoes) and oil, place in an aluminum tray on the hot grill. Grill for about 5 minutes, turning occasionally.

    Meanwhile, peel the onion and cut it into thin slivers; grill the sausages around the onions until golden brown. Arrange on a plate or bowl. Mix the salad with tomatoes, garden cress, and basil, season with salt and pepper, add a splash of lemon juice, and serve with the sausages.
