Ingredients
- 1 onion
- 4 Garlic cloves
- 1 bulb fennel
- 200 g celery root
- 4 tbsp olive oil
- 200 g white beans (canned)
- 1 l meat broth
- 1 bunch parsley
- 5 sage leaves
- 10 dried tomatoes (in oil)
- 4 Salsiccia
- 200 g noodles (e.g., horned pasta)
- Salt
- black pepper (ground)

Peel and finely chop the onion and garlic. Clean, wash, and slice the fennel. Peel and dice the celery root. Heat olive oil in a large pot and sauté the onion with the garlic until translucent. Add the drained beans and pour in the meat broth; simmer for 10 minutes. Wash the parsley, pull leaves from stems, and roughly chop. Rinse the sage and shake dry. Finely chop the dried tomatoes. Add the Salsiccia and vegetables and simmer for another ~20 minutes.

Add the noodles to the soup during the last 5-6 minutes and cook until al dente according to package instructions. Add herbs and tomatoes, season with salt and pepper.
