Nizza Salad

Ingredients

  • 1 red bell pepper
  • 150 g kidney beans
  • Salt
  • 3 spring onions
  • 4 tomatoes
  • 2 hard-boiled eggs
  • 1 large boiled potato
  • 5 pickled sardine fillets
  • 50 g black olives
  • 1 Garlic clove
  • juice of one lemon
  • Salt
  • Pepper
  • 6 tbsp Olive oil
  • 10 basil leaves

Instructions

    Wash the beans, trim ends and cook in plenty of salted water for about 7 minutes, cool under cold running water and drain well. Halve the bell pepper, remove seeds, wash and cut into strips. Trim spring onions and slice thinly. Wash tomatoes, pat dry and quarter them. Peel eggs and quarter them too.

    Peel and cube the potato. Rub a large bowl with a halved garlic clove and add the salad ingredients. Rinse the sardines and cut into strips. Add olives to the salad. Whisk together salt, pepper, lemon juice and olive oil to make a dressing. Drizzle over the salad and garnish with basil leaves.
