Ingredients
- 50 g sushi rice (Asia store)
- iodized salt
- 1 tsp whole-grain sugar
- 2 tbsp rice vinegar
- 50 g extra-fresh pikeperch fillet
- 2 stalks celery
- 3 radishes
- 1 tsp freshly grated horseradish
- 1 nori sheet (Asia store)
- pickled ginger
- soy sauce
- Wasabi
Instructions

Cook the rice with salt according to package instructions, then let it steam off. Mix sugar and vinegar together and fold into the rice. Allow the rice to cool.

Slice the pikeperch into thin strips; cut celery into pieces and radishes into thin slices. With slightly damp hands, shape small elongated rice balls from the cooled rice.

Brush the rice balls with a little horseradish. Top each ball with pikeperch, celery, and radish slices. Wrap with sliced nori if desired. Arrange on a plate with remaining vegetables, pickled ginger, wasabi, and soy sauce.
