Spicy Lamb Curry

Ingredients

  • 1 kg lamb meat (shoulder or leg)
  • 3 onions
  • 2 Garlic cloves
  • 10 g ginger (1 piece)
  • 2 red chilies
  • 1 tsp Paprika powder (sweet)
  • 0.5 tsp clove powder
  • 0.75 tsp turmeric
  • 1 tsp ground coriander
  • Salt
  • 2 tbsp yogurt (1.5% fat)
  • 3 tomatoes
  • 3 tbsp sunflower oil
  • 200 ml lamb stock
  • 250 g long-grain rice
  • 4 stems cilantro

Instructions

    Cube the meat. Peel and halve onions lengthwise, slice thinly. Peel garlic, finely dice one clove. Peel ginger, grate it. Press the remaining garlic into the ginger.

    Wash chilies, halve, clean, finely chop, mix with ginger-garlic mixture, paprika, clove powder, turmeric, coriander, 1/2 tsp salt and yogurt. Toss meat in this mixture. Cover and refrigerate for about an hour to marinate.

    Meanwhile wash tomatoes, blanch, peel, halve, core, and dice small.

    Heat oil in a pan. Sauté onions and diced garlic, add the marinated meat with tomatoes. Simmer covered over low heat for 1¼ hours, adding lamb stock gradually.

    Cook rice according to package instructions. Wash cilantro, shake dry, roughly chop. Taste the curry, garnish with cilantro, and serve with rice.
