Ingredients

  • 2 Zucchini
  • 2 Tomatoes
  • 2 mozzarella balls (sliced)
  • 2 Garlic cloves
  • Sea salt
  • Pepper (freshly ground)
  • 4 Basil stems
  • basil leaves for garnish

Instructions

    Wash, trim, and slice the zucchini lengthwise into about 1 cm thick slices.

    Wash the tomatoes, remove the stem ends, and cut them into roughly 2 cm thick slices.

    Peel and halve the garlic, then place it with the basil stems and vegetables in a shallow baking dish. Season with salt and pepper, drizzle generously with olive oil, cover, and marinate for about 2 hours.

    Remove the vegetables from the marinade and grill each side for about 3-4 minutes over high heat, brushing with leftover marinade midway. Finally, plate the grilled veggies, top with mozzarella slices, and sprinkle with basil leaves before serving.
