Ingredients
- 200 g watermelon flesh
- 200 g small mozzarella balls
- 200 g small radishes
- 200 g black olives (pitted)
- 2 tbsp agave syrup
- 4 tbsp white balsamic vinegar
- 2 tbsp lemon juice
- 4 tbsp olive oil
- Salt
- Pepper (freshly ground)
- 0.5 handful fresh tarragon

Remove seeds from watermelon flesh. Drain mozzarella. Wash and trim radishes, leaving stems if desired. Drain olives. Thread watermelon, mozzarella, radishes, and olives onto about 20 small wooden skewers and place in a shallow bowl.

Whisk agave syrup with vinegar, lemon juice, and olive oil. Season generously with salt and pepper. Rinse tarragon leaves, pick off the smaller ones, and stir into the dressing. Drizzle dressing over the skewers and marinate for at least 30 minutes in the refrigerator.
