Ingredients
- 400 g couscous
- 400 ml boiling salted water
- 1 Red Onion
- 50 g Pine nuts
- 2 tbsp chopped parsley
- pomegranate seeds (kernels)
- 0.5 untreated lemon (juice and zest)
- 2 Garlic cloves
- 0.5 tsp Coriander powder
- 4 tbsp olive oil
- 3 tbsp white wine vinegar
- Salt
- ground pepper
Instructions

Pour boiling salted water over the couscous and let it stand for 5 minutes to absorb the liquid. Fluff the couscous with a fork and allow it to cool.

Peel the red onion, halve it, and slice into thin strips.

Peel the garlic cloves and finely mince them. Combine all these with the cooled couscous in a bowl. Stir in pine nuts and pomegranate seeds.

Season with coriander powder, chopped parsley, lemon juice, salt, and pepper. Add olive oil and white wine vinegar, mixing thoroughly. Divide the mixture into serving bowls and sprinkle with lemon zest before serving.
