Moroccan-Style Couscous

Ingredients
- 400 g Tomatoes
- 2 shallots
- 1.5 green bell peppers
- 150 g corn (drained weight; canned)
- 4 stems coriander
- 4 stems parsley
- 300 g instant couscous
- 2 tbsp olive oil
- 1.5 tsp brown mustard seeds
- 1 cinnamon stick
- 1 tbsp dried curry leaf
- 0.5 tsp ground fenugreek
- a pinch ground cumin
- 300 g minced beef
- 1 tbsp Tomato Paste
- 180 ml meat broth
- Salt
- Pepper

Rinse tomatoes with boiling water, drain, cool, peel, quarter, seed and dice small.

Peel shallots and slice thinly. Wash peppers, trim and dice. Drain corn. Wash coriander and parsley, shake dry and chop. Prepare couscous according to package instructions. Meanwhile heat oil in a pan. Sauté shallots with spices over medium heat until translucent. Add minced beef, stir occasionally over high heat for about 5 minutes until crumbly. Stir in tomato paste and diced tomatoes; simmer 4 minutes over medium heat. Add broth and simmer another 6 minutes. Fold in remaining vegetables and couscous, season with salt and pepper, cover and cook over medium heat for about 10 minutes. Stir in herbs.
