Ingredients

  • 350 g couscous (instant)
  • 80 g sugar
  • 2 tbsp lemon juice
  • 2 tbsp orange blossom water
  • 1 tsp rose water
  • 80 g dried apricots
  • 100 g dried dates
  • 50 g Raisins
  • 50 g sultanas
  • 80 g shelled almonds
  • 2 tbsp chopped pistachios
  • 0.5 tsp ground cinnamon

Instructions

    Pour about 500 ml boiling water over the couscous and let it stand for about 10 minutes to absorb. Then fluff with a fork.

    For the syrup, simmer the sugar with 100 ml water and lemon juice for about 10 minutes until sparkling.

    While that steams, slice apricots into strips and pit and chop dates. Mix the apricots, raisins, sultanas, almonds, pistachios, and cinnamon into the syrup. Remove from heat and let cool slightly.

    Finally combine well with the couscous and serve on plates.
