Ingredients
- 300 g flour (preferably type 00)
- 3 eggs
- 1 tbsp Olive Oil
- 0.5 tsp Salt

Sift or heap the flour onto a work surface, create a well in the center, and add the eggs.

Add salt and oil, knead everything into a smooth dough; if the dough is too dry, incorporate a little water. Wrap in plastic wrap and let rest for at least 30 minutes.

Divide the dough into 2-3 pieces; wrap unused portions in plastic wrap, roll the last piece flat on a lightly floured surface.

Pass the rolled dough through the pasta machine repeatedly until it reaches the desired thickness.
