Moroccan Bean Salad

A Moroccan-style bean salad from Spoonsparrow is always well received.

Ingredients

  • 600 g thick beans
  • 10 g parsley (0.5 bunch)
  • 70 g red onions (1 red onion)
  • 2 Garlic cloves
  • 0.5 lemon
  • 2 tbsp olive oil
  • 1 tsp Honey
  • 1 tsp ground cumin
  • Salt
  • Pepper

Instructions

    Bring salted water to a boil in a pot and cook the beans over medium heat for 6–8 minutes, then rinse under cold water and drain (remove skins if desired). Let cool.

    Wash parsley, shake dry, and finely chop. Peel onion and garlic and dice finely. Squeeze lemon juice.

    Combine parsley, onion, and garlic with oil, 1 tbsp lemon juice, honey, and cumin. Fold in beans and season with salt and pepper.
