Colorful Carrot Salad

A colorful carrot salad from Spoonsparrow is quick to make and works well as a side dish or main course.

Ingredients

  • 400 g colorful carrots
  • 1 apple
  • 2 tbsp olive oil
  • 1 tbsp Apple cider vinegar
  • 1 tsp Honey
  • Salt
  • Pepper
  • 0.5 bunch chives (10 g)
  • 60 g goat cheese (45% fat in milk)

Instructions

    Wash and peel the carrots, then cut them into long strips with a vegetable peeler. Wash the apple, halve it, core it, and slice it thinly.

    Whisk together oil, vinegar, honey, salt, and pepper for the dressing, then toss with carrot strips and apple slices.

    Rinse the chives, pat dry, and finely chop into small curls. Crumble the goat cheese. Sprinkle both over the salad just before serving.
