Ingredients
- 500 g various Patisson pumpkin (cleaned and hollowed)
- 2 small sweet potatoes
- 4 small potatoes
- 2 blue onions
- 2 small beets
- 2 carrots
- 1 white turnip
- 4 tbsp butter
- 4 tbsp olive oil
- Salt
- Pepper
- fresh thyme

Cut the Patissons into 0.5 cm thick rings. Peel and slice the onion into thicker slices. Wash, scrub, and if necessary peel the root vegetables, then cut them into about 3 mm thin slices.

Lightly salt everything. Heat 1 tsp butter with 1 tsp oil in a pan and fry each type of vegetable briefly, adding more fat as needed. Spread the remaining fat on a baking sheet and arrange the vegetables there, lightly pepper and season, then bake at 200°C for about 20 minutes. Sprinkle fresh thyme over the vegetables 10 minutes before the end of cooking.
