Mixed Grain Rolls

Ingredients
- 500 g wheat flour (Type 550)
- 0.5 cube yeast (ca. 21 g)
- 0.5 tsp Sugar
- 1 tsp salt
- flour for working
- butter for the baking tray
- 2 tbsp milk
- 2 tbsp pumpkin seeds
- 2 tbsp pine nuts
- 2 tbsp poppy seeds
- 2 tbsp sunflower seeds
- 2 tbsp ground flaxseed

Sift the flour into a bowl, make a well in the center, crumble the yeast into it and stir with sugar, 4 tbsp water and a little flour from the rim until smooth. Cover and let rise in a warm place for about 20 minutes. Then knead the dough with the remaining flour, about 200 ml lukewarm water and salt until it slightly detaches from the bowl edge. Cover again and let rise for another 45 minutes until doubled in size. Afterwards knead vigorously on a floured surface, let rest for 15 minutes, then shape into a log. Cut into 15-20 equal pieces, form balls and place them close together on a butter‑brushed baking tray.

Preheat the oven to 200°C (400°F) with upper and lower heat.

Brush the rolls with milk and sprinkle with the various seeds. Bake for about 20 minutes until golden brown.
