Ingredients

  • 225 g wheat flour type 1050
  • 70 g cocoa powder
  • 325 g butter
  • 175 g whole cane sugar
  • a few beans for blind baking
  • 4 eggs
  • 175 g dark chocolate
  • 2 tsp instant coffee powder
  • 300 g crème fraîche
  • 300 ml whipping cream
  • 50 g chocolate shavings

Instructions

    Add the flour with 25 g cocoa and 150 g butter pieces to a bowl and crumble together. Add 25 g sugar and 1–2 tbsp water. Knead until a smooth dough forms. Wrap in plastic wrap and chill for about 30 minutes.

    Line a pie tin with parchment paper. Roll out the dough and line the tin, shaping and pressing a good edge. Cover with parchment and sprinkle the beans inside. Blind bake in a preheated oven at 180 °C (fan: 160 °C; gas: level 2–3) for about 20 minutes.

    For the filling beat the remaining butter with the remaining sugar until fluffy. Gradually add eggs and the rest of the cocoa powder, stirring well. Chop the chocolate and melt it together with the coffee powder and crème fraîche. Let cool slightly and fold into the dough mixture. Spread over the crust and bake in the oven for another 40 minutes.

    Remove from the oven, let cool a bit, then release from the tin onto a cooling rack to finish cooling.

    Whip the cream to half‑stiff peaks and spread over the pie. Sprinkle with chocolate shavings before serving.
