Ingredients
- 1 red chili pepper (halved and seeded)
- 3 thin slices of fresh ginger
- 2 baby pak choi (separated leaves)
- 100 g shiitake mushrooms (halved)
- 300 g orange bell peppers (cut into bite‑sized pieces)
- 70 g bean sprouts
- 200 g udon noodles
- 175 g larger shrimp (peeled and cooked)
- 1 packet miso soup mix (for about 600 ml water)
- 2 tsp sesame oil
- soy sauce
Instructions

Pour 600 ml of water into a pot. Add chili and ginger and bring to a boil.

Add pak choi and mushrooms, simmer for 3 minutes. Then add bell peppers and bean sprouts and simmer for another 3 minutes.

Now add noodles, shrimp, miso soup mix, and sesame oil, simmer for about 2 more minutes. Serve immediately in bowls with soy sauce.
