Ingredients

  • 1 red chili pepper (halved and seeded)
  • 3 thin slices of fresh ginger
  • 2 baby pak choi (separated leaves)
  • 100 g shiitake mushrooms (halved)
  • 300 g orange bell peppers (cut into bite‑sized pieces)
  • 70 g bean sprouts
  • 200 g udon noodles
  • 175 g larger shrimp (peeled and cooked)
  • 1 packet miso soup mix (for about 600 ml water)
  • 2 tsp sesame oil
  • soy sauce

Instructions

    Pour 600 ml of water into a pot. Add chili and ginger and bring to a boil.

    Add pak choi and mushrooms, simmer for 3 minutes. Then add bell peppers and bean sprouts and simmer for another 3 minutes.

    Now add noodles, shrimp, miso soup mix, and sesame oil, simmer for about 2 more minutes. Serve immediately in bowls with soy sauce.
