Ingredients

  • 180 g flour
  • 1 pinch salt
  • 4 tbsp sugar
  • 100 g cold butter
  • 1 egg
  • 120 g butter (in small pieces)
  • 100 g sugar
  • 200 g Flour
  • 600 g mirabelle plums
  • 3 eggs
  • 600 g quark
  • 100 g sugar
  • 2 tbsp vanilla sugar
  • 3 tbsp cornstarch
  • 100 g melted butter
  • 3 tbsp orange juice
  • 1 tsp grated orange zest (unprocessed)
  • butter (for parchment paper)
  • powdered sugar

Instructions

    Sift flour onto a work surface, mix with salt and sugar, and press a well into the center. Cut cold butter into small pieces and distribute around the well; add the egg, about 2 tbsp cold water, and use a knife to cut through all ingredients until small dough crumbs form. Quickly knead by hand into dough, shape into a ball, wrap in cling film, and chill for about 30 minutes.

    For the crumble, mix the listed ingredients in a bowl and process into crumbs, rubbing the dough repeatedly between two hands until it takes on crumbly consistency. Cover and refrigerate the crumble.

    Roll out the dough between two sheets of parchment paper and line the bottom of a springform pan with parchment paper, then spread thinly over the base. Preheat the oven to 180°C fan.

    For the filling, wash, halve, and pit the mirabelle plums. Separate the eggs. Whisk quark with sugar, vanilla sugar, yolks, cornstarch, butter, orange juice, and orange zest. Beat egg whites stiffly and fold into the mixture. Spread the quark mixture over the dough, then arrange plum halves and crumble on top.

    Bake in the preheated oven for about 60 minutes. If needed, cover with buttered parchment paper.

    Remove the cake from the oven and let it cool. Release from the pan, dust with powdered sugar, and serve.
