Ingredients
- 150 g flour
- 75 g butter
- 1 egg
- 0.5 tsp Salt
- 200 g large cherry tomatoes
- 3 eggs
- 200 ml whipping cream
- 400 g cream cheese
- 60 g Parmesan (freshly grated)
- 0.5 tsp Dried oregano
- Sea salt
- pepper (ground)
- olive oil (for the pan)
- fresh basil (for garnish)
Instructions

Knead flour, cold butter pieces, egg and salt quickly into a dough, shape into a ball and wrap in cling film to rest in the fridge for about 30 minutes.

Wash tomatoes, leave stems on if desired. Whisk eggs with cream, cream cheese and parmesan, season with oregano, salt and pepper.

Preheat oven to 180°C (convection).

Roll out dough and line an oiled quiche tin, letting the edge hang slightly over. Spread the cheese mixture over it, add tomatoes and bake in the preheated oven for about 40 minutes until golden brown. Remove and serve garnished with basil leaves.
