Mint Quark with Sea Buckthorn

The aromatic mint quark with sea buckthorn from Spoonsparrow is always a hit.

Ingredients

  • 200 g red sea buckthorn
  • 2 tbsp honey
  • 4 sprigs Mint
  • 400 g quark (20% fat in the mix)
  • 80 g yogurt (3.5% fat) (4 tbsp)
  • 1 tsp rice syrup

Instructions

    Clean, wash and halve the sea buckthorn. In a pot combine with honey and bring slowly to a boil. Simmer gently for about 5 minutes on low heat, then let cool for 15 minutes.

    Meanwhile wash the mint, pat dry, set aside four leaves, chop the rest. Stir together quark, yogurt, and rice syrup until smooth.

    Fill glasses or small bowls with quark and spread the sea buckthorn compote over it. Garnish with the reserved mint leaves.
