Ingredients

  • 200 g butter
  • 200 g sugar
  • 4 eggs
  • 1 packet baking powder
  • 400 g spelt flour
  • 80 ml milk
  • 1 jar sweet cherries (about 750 g)
  • powdered sugar (for dusting)

Instructions

    Line the bottom of a springform pan with parchment paper and grease the rim if needed.

    Cream butter and sugar with an electric mixer, then gradually add the eggs and zest, mixing well. Combine baking powder with flour and alternately fold into the mixture with milk. Drain cherries, lightly dust them with flour, and fold into the batter.

    Pour batter into prepared pan and bake in a preheated oven at 180 °C (fan 160 °C; gas level 2–3) for 45–55 minutes. Test with a skewer to see if the cake is done, then remove the spelt cherry cake from the oven. Let cool, carefully lift it out of the pan and allow it to cool completely on a wire rack. Dust with powdered sugar before serving.
