Mint Lime Lemonade

The homemade mint lime lemonade from Spoonsparrow provides a refreshing drink on hot days.
Ingredients
- 40 g coconut blossom sugar
- 6 organic limes
- 2 sprigs Mint
- crushed ice
- 400 ml mineral water (well chilled)

Boil the coconut blossom sugar with 75 ml water and simmer for 2 minutes. Remove from heat and let cool.

While that steams, rinse a lime hot, pat dry, and finely grate its zest. Slice the lime into rounds and set aside. Cut the remaining limes in half and squeeze out the juice. Rinse the mint, shake dry, pluck the leaves and finely chop them. Add the mint, lime zest, and juice to the syrup and stir well.

Fill glasses about halfway with crushed ice. Divide the syrup among the glasses and top up with mineral water. Add the lime slices and serve.
