Mini Pizza Bites with Olive, Mozzarella and Ham

Ingredients
- 400 g flour
- 21 g fresh yeast (1/2 cube)
- 1 tsp sugar
- 1 tsp salt
- 2 balls mozzarella
- 150 g ham (sliced)
- 600 g passata tomato (canned)
- Salt
- pepper (ground)
- 100 g black pitted olives
- olive oil
- herb sprig for garnish (thyme, basil and oregano)

Knead a yeast dough from flour, yeast, sugar, salt and about 250 ml lukewarm water. Cover and let rise in a warm, draft-free spot for about 1 hour. Punch down the dough and let it rise again for another 30-40 minutes. Line a baking tray with parchment paper. Preheat the oven to 220°C (fan) or 425°F. Dust the work surface with plenty of flour and divide the dough into 16 balls. Roll out each ball with a rolling pin. Place on the tray and press flat evenly with your hands, leaving a slightly thicker edge. Brush the dough with olive oil. Spread passata tomato over the mini pizzas and season with salt and pepper.

Drain the mozzarella well, slice it, and cut the ham into pieces. Top the pizzas as desired with ham, cheese and olives. Drizzle with olive oil and bake in the preheated oven for 8-12 minutes until golden brown. Serve garnished with herbs.
