Mini Hare-Cupcakes

Ingredients
- 175 g dark chocolate
- 150 g soft butter
- 3 eggs
- 90 g sugar
- 30 g flour
- 1 pinch salt
- 200 g whipping cream
- 100 g white chocolate
- 1 EL orange juice
- 1 EL orange liqueur
- butter (for the molds)
- powdered sugar
- white chocolate strips
Instructions

Melt 175 g dark chocolate in a double boiler. Stir in the butter. Use a vegetable peeler to cut ribbons from the remaining chocolate for garnish and set aside.

Separate the eggs. Beat the yolks with 50 g sugar until pale and fluffy. Fold in the flour, then add the melted chocolate.

Beat the egg whites with the remaining sugar and salt until stiff peaks form, then fold into the batter.

Grease the molds with butter and fill about two-thirds full with the mixture.

Bake in a preheated oven at 200°C for approximately 20 minutes. Remove the molds, let them cool slightly, then unmold onto a cooling rack. Decorate the cupcakes thinly with powdered sugar and white chocolate strips.

For the sauce, bring the cream to a boil. Break the white chocolate into pieces and melt it in the cream. Flavor with orange juice and orange liqueur to taste.

Dust the rim of each plate lightly with powdered sugar. Spread the sauce over the plates, place the cupcakes on top, and decorate the rims with chocolate ribbons.
