Ingredients

  • 450 ml milk
  • 1 pinch salt
  • 3 tbsp sugar
  • 1 vanilla pod
  • 0.5 stick cinnamon
  • 100 g round-grain rice
  • 1 tbsp butter
  • 50 ml whipping cream
  • 1 cane sugar

Instructions

    Add the milk, salt and sugar to a pot and heat. Split the vanilla pod lengthwise, scrape out the seeds and add both the seeds and pod to the milk. Add the cinnamon, bring to a boil again, then add the rice. Reduce the heat to the lowest setting and let the rice simmer for about 30 minutes until tender, stirring occasionally. Finally stir in the butter and cream.

    Remove the vanilla pod and cinnamon stick. Transfer to oven-safe ramekins and allow to cool slightly. Sprinkle sugar over the surface and caramelize with a broiler.
