Milk Rice Sushi Coconut Dream
Milk rice sushi with coconut milk from Spoonsparrow. Sweet treat for children aged 4 and up.
Ingredients
- 1 Vanilla bean
- 250 ml milk (1.5% fat)
- 500 ml coconut water
- 50 g sugar
- 2 sheets gelatin
- 250 g milk rice
- 1 small ripe mango
- 1 Kiwi
- 1 orange
Instructions

Slice the vanilla bean lengthwise and scrape out the seeds with a knife.

Add milk, coconut water and sugar to a pot. Stir in the vanilla seeds and bring to a boil.

Soak gelatin in cold water for 10 minutes.

Stir the milk rice into the hot milk, cover and simmer on low heat for 25–30 minutes, stirring occasionally.

Remove gelatin from water, place it in a small pot and warm over low heat until dissolved. Stir the melted gelatin into the still-warm milk rice and let cool for about 30 minutes.

Meanwhile wash the mango and peel with a vegetable peeler. Cut the flesh into thick slices away from the pit, then cut into ~3 cm long and 2 cm wide strips. Place in a small bowl.

Peel the kiwi, halve it lengthwise and slice. Arrange kiwi slices on a plate.

Peel the orange, removing the white pith as well. Slice the fruit between the membranes and place in a small bowl.

With damp hands (or thin rubber gloves), shape 1 tablespoon of milk rice into sticks about 4–5 cm long and 2 cm wide on a serving platter. Top each stick with mango strips, orange slices and kiwi slices before serving.
