Ingredients
- 2 Eggs
- 80 g sugar
- 150 ml milk
- 150 ml espresso
- 200 ml whipping cream (30%)
- 100 g chopped dark chocolate (70%)
- mint
- 150 g raspberries
- 100 ml milk
Instructions

Whisk the eggs with sugar, milk and espresso over a hot water bath until creamy (do not boil). Then chill by stirring cold (possibly over an ice water bath). Beat the cream stiffly and fold it into the chocolate, then mix into the chilled mixture.

Transfer the ice cream base to a shallow metal bowl and place in the freezer for at least 4 hours, stirring vigorously every 30 minutes.

Serve by scooping with an ice cream scoop into dessert glasses, pour slightly chilled milk over, garnish with mint and decorate with raspberries.
