Mexican Tomato Salad

A delicious salad perfect for grilling or as a light dinner.

Ingredients

  • 250 g tomatillos
  • 250 g cocktail tomatoes
  • 2 red onions
  • 2 Garlic cloves
  • 1 jalapeño
  • 2 tbsp olive oil
  • 2 tbsp freshly chopped cilantro
  • lime juice
  • Salt
  • tortilla chips (optional)

Instructions

    Wash, trim and cut the tomatillos and tomatoes into pieces. Peel and finely dice the onions and garlic. Wash, halve, deseed and chop the jalapeño.

    Combine all prepared ingredients with olive oil and cilantro, then season with lime juice and salt. Divide onto glasses and serve with tortilla chips if desired.
